Recipe: How to make homemade strawberry jam

As a child, I would indulge in delicious peanut butter and jelly sandwiches on many occasions. It was easy, quick to make and delicious. I enjoyed them with wheat bread, white bread, with and without bread edges, toasted, room temp, it didn't matter - I thoroughly enjoyed them. Recently, a friend came over and we experimented with peanut butter and my homemade jam in between our pancake stacks! It was absolutely delicious, so I want to share my homemade jam recipe with you, so you too can try this delicious creation using our delicious vegan pancake mix that can be purchased by clicking here.

Strawberry Jam Recipe

3 pounds strawberries 🍓

3 1/2 cups organic sugar

1/4 Cup lemon juice

Directions:

In a large bowl, mash your hulled strawberries. In a saucepan, mix together your strawberries, sugar, and lemon juice. Stir over low heat until the sugar is completely dissolved. Increase heat to high, and bring the mixture to rolling boil. Boil, stirring often, until the mixture reaches 220 degrees Fahrenheit. Then transfer to hot sterile mason jars, leaving 1/4 to 1/2 inch space at the top, and seal. Process in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate.
